The Anogyra Pasteli Festival celebrates the carob harvest in the village of Anogyra, a traditional carob-growing area in Cyprus. The main attraction is the demonstration of pasteli making, a long and complex process that transforms carob juice into a thick, golden sweet. Visitors can watch the traditional method, which involves boiling carob honey and hand-working the pasteli mass until it acquires its characteristic color.
Beyond the pasteli demonstration, the festival offers a taste of local culture with traditional Cypriot music and dances, as well as a live concert by famous Greek singers. Attendees can sample "shereppeti" (sweet carob juice) and "Terzellouthkia" (spiral dough cookies with carob honey), and purchase carob syrup to take home.
